Easy Crockpot Granola  (gluten free)

Ingredients
  • 5 cups rolled oats (we use Bob's Red Mill Gluten Free Rolled Oats)
  • 1 cup sweetened coconut flakes (use unsweetened if you prefer)
  • 1 teaspoon cinnamon
  • 1/2 cup oil (we use extra virgin olive oil, coconut oil would also be good)
  • 1/2 cup honey
  • 1 teaspoon vanilla extract
Instructions
  1. Add oats, coconut and cinnamon to crockpot and stir to combine.
  2. Add oil and honey (if you use the same measuring cup you used for the oil to measure the honey, it will slide out of the cup more easily.)
  3. Add vanilla.
  4. Stir until all ingredients are well incorporated.
  5. Cook on low for one hour with the lid of the crockpot cracked.
  6. Stir granola and replace lid (slightly open).
  7. Cook for 2 additional hours, stirring every 30 minutes for the first hour and every 15 minutes for the last hour. This burns easily!
  8. Store in an airtight container in the refrigerator.

Easy Baked Apples (GF)

It’s Fall, so what to do with all those apples? Try this easy baked apples recipe with cinnamon and raisins!

Easy Baked Apples


Ingredients:
1 apple per person (Granny Smith are great for this recipe!)
1 tablespoon raisins per apple
1/2 tablespoon cinnamon + 1/2 tablespoon brown sugar per apple

Directions:
Core and slice apples into thin uniform pieces. Place in a glass baking dish and add just enough water to cover the bottom of the dish.
Spread raisins throughout the apple slices. Sprinkle with cinnamon and brown sugar.
 Bake at 350 degrees for 30 minutes.

Ingredients
  • 1 flat wrap (like Flat Out)
  • 1-2 tablespoons ranch dressing
  • 1 leaf Romaine or Green Leaf Lettuce
  • 1/2 avocado sliced
  • 2 tomato slices
  • 2 red onion rings
Instructions
  1. Place wrap flat on a plate.
  2. Spread ranch dressing onto wrap.
  3. Layer lettuce, turkey, avocado and tomato.
  4. Place red onion rings on top.
  5. Roll up and enjoy!

Ingredients
  • For cups:
  • (6) 6 inch flour tortillas
  • 2-4 tablespoons olive oil in a small bowl
  • For Filling:
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 1/2 green or red pepper, diced (optional)
  • 1 lb ground beef
  • 2 tablespoons taco seasoning* (see link for homemade recipe below)
  • Toppings of choice (shredded cheese, tomatoes, green onions, avocado)
Instructions
  1. Brush both sides of each tortilla lightly with olive oil.
  2. Arrange each tortilla into the cup of a muffin tin, so that it forms a bowl shape.
  3. Bake at 350 degrees for ten minutes or until the top of the cups is lightly brown.
  4. While the cups are baking, add 2 tablespoons of olive oil to a large stainless steel or iron skillet (or spray with cooking oil).
  5. Over medium heat, saute peppers (if using) and onion until the peppers are soft and the onion is slightly translucent.
  6. Add ground beef and brown.
  7. Push meat to the outside of pan and add taco seasoning to the center of the pan.
  8. Allow seasoning spices to heat for 45 seconds.
  9. Stir seasoning into meat.
  10. Add 1/4 cup water and stir again.
  11. Add taco meat to baked cups and squeeze with a little bit of lime.
  12. Garnish with desired toppings.
  13. Serve immediately.
Notes
*Taco seasoning: 4 tbsp. chili powder; 2 tsp. cumin; 1 tsp. cinnamon; 1 tsp. salt; 2 tsp. oregano; 1 tsp. cayenne pepper.
Combine in a small bowl. Store in an airtight container if not using immediately.
